Why is is that mini eggs are so good? There's something about that crisp shell with that delish milk chocolate that is so hard to resist! Here's a recipe that I found on Instagram that was calling my name. Is it a winner? What a silly question! Of course it is! How could this recipe be anything but? Filled with chocolate, crisp rice cereal and mini eggs. It's delightfully, beautifully, wonderful and so easy to make:)

Here we go. . .

Mini Egg Chocolate Rice Krispie Bar

In a saucepan melt together until smooth
1/2 c. butter
1 100g. dairy milk bar broken into pieces
2 c. mini marshmallows

Remove from heat and stir in
4 1/2 c. rice krispies
1/2 -1 c. smashed mini eggs (I put mine in a ziploc and bang it with something heavy)

Press into a 8x8 baking dish that has been lined with parchment paper

Melt (if using a microwave, do it in bursts - do not overheat or your chocolate will be dry)
2 100 g. dairy milk, broken into pieces

Spread over the rice krispie bar.

Sprinkle over top
3/4 c. smashed mini eggs
1/2 c. full eggs.

Let set and . . .
