Loved the name of this bar! Not sure why, but it seemed to be calling out to be baked. So, here we go. I thought this bar would really be like a chocolate chip cookie. It has similarities but it's much heartier. It's a lovely bar to go with a glass of milk, cup of tea or a coffee. Great for lunch boxes (maybe minus the nuts) and an afternoon snack. I have to confess that after I made this, I wasn't sure - this is the funny part - I thought there was way too much cinnamon - after typing the recipe into this post, I realized that instead of the 1/2 tsp, I used 2 tsp. so was the cinnamon too much, yes, lol 2 tsp is a real jolt of cinnamon. It wasn't terrible, just a lot of cinnamon that overpowered the chocolate chips - which in my world, nothing is allowed to overpower the chocolate! All in all this is a really nice recipe, whether you use the correct amount of cinnamon or not;)
Let's bake. . .
Cowboy Bar
Into a bowl, add in and mix
1 c. flour
1 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. b. powder
Into a separate bowl, mix
1 c. packed b.sugar
2 large eggs
2 tsp. vanilla
1/2 c. melted unsalted butter - cooled
Add the wet mixture to the flour, stirring well.
Add in
3/4 c. quick oats
1/2 c. coconut
1/2 c. chopped pecans
1/2 c. chocolate chips
Spread into an parchment lined 8x8 pan.
Bake at 350 for about 25 minutes, until the edges are golden brown.
Cut into bars and . . .
