An All-Time Good Cookie! Peanut Butter Cookies
I haven't made a classic peanut butter cookie in forever! I found this recipe and thought I'd give it a try. While I rolling and pressing the fork into the dough, I had such strong memories of my grandma - she was a master baker and cook - she was amazing, but for some reason I remember her always rolling and pressing into her peanut butter cookies. She lived to be 100, lived thru the depression, wore jeans until the end and was a kind, generous person. Anyway, the point is that baking, cooking, and food remind us of many moments in our lives—both good and bad—but today, let's focus on the happy memories! Let's bake. . .
Peanut Butter Cookies
Into the bowl of your stand mixer, cream together
1/2 c. unsalted butter, room temp
2/3 c. sugar
1/3 c. b. sugar
Add in
2/3 c. peanut butter
1 lg. egg
In a separate bowl, add in a whisk together
3/4 tsp. b. powder
1/2 tsp. b. soda
1/4 tsp. salt
1 1/3 c. flour
Add the flour, to the peanut butter and mix well. (dough will be sticky)
Form into 1" balls (I used my cookie scoop)
Dipping your fork into sugar, press the tops gently both ways to get a criss cross pattern or sprinkle a bit of sugar on top and then press down with the fork - whatever works for you.
Bake at 350 for 8-9 minutes.
Makes about 24 cookies
