Shea's favorite Cookie might just be Mine!
I was going thru my cookbooks and came across one that I had forgotten I had. I received it for Christmas last year and for some reason it got pushed to the back. It's such a lovely cookbook 'Around the Table by Shea McGee'. It's full of recipes but it's also full of the rooms that she decorates. If you aren't familiar with her, give her a search - her style is 'New Heritage' which is a bit modern, a bit traditional, a bit farmhouse but always warm and inviting. For me, the first thing I try in a new cookbook is the chocolate chip cookie. This cookie is very good! It seemed to be a bit more involved than some others but the result is worth the extra time. Absolutely a keeper!
Let's bake. . .
Shea's Favorite Chocolate Chip Cookie
Cream together using the paddle attachment if you're using a stand mixer.
Mix for 5 minutes
1 c. unsalted butter, room temp
1 c. packed b.sugar
3/4 c. sugar
Add in beating between additions until smooth
1 tbsp vanilla
2 eggs
In a medium bowl, add in
3 1/4 c. flour (spooned into the measuring cup)
2 tsp. b. powder
1 tsp. b. soda
1 1/2 tsp. salt (I used sea salt, recipe called for kosher)
1 1/2 c. chocolate chips
1 1/4 c. chocolate chunks*
*recipe called for 1 1/4 c. chopped dark chocolate, 1 1/2 c. semi sweet chips but the above is what I used
Slowly add the flour mixture to the butter mixture, using small bursts so the flour doesn't spray.
Using a cookie scoop or drop by the spoonful and place about 2" apart.
Bake at 375 for about 8 minutes until lightly golden. Baking time will vary depending on the size of your cookie.
Enjoy
