Sneak a little Veggie into Your Cookie!
It's that time of year when baking with veggies is the thing! Think carrot muffins and cakes, apple pies, muffins and loaves and so much more. So, here is a recipe for a chocolate chip cookie with zucchini. I have made this type of cookie but this is a new recipe that I found on the King Arthur Flour site. And.. here's the review. This is a very soft, moist cookie and if you didn't see the bits of zucchini, you would never know it's in there. So if you're trying to get a few more veggies into your diet or you just need to use up your zucchini, this is a really good cookie. In fact, you'll be asking your friends and neighbors if they need to get rid of their zucchinis!
Zucchini Chocolate Chip Cookies
Beat together
1/4 c. veg. oil
3/4 c . + 2 Tbsp. brown sugar (packed)
1/2 tsp. b. powder
1/4 tsp. b. soda
3/4 tsp. salt
2 tsp. vanilla
Stir in
1 large egg
1 c. shredded zucchini (I like mine peeled)
Add in
1 c. whole wheat flour
1 1/2 c. quick oats
Add in 2 c. chocolate chips
Drop onto your parchment lined cookie sheet and bake at 350 for about 10-12 minutes or until lightly golden.
