Carmelita - A Gorgeous Girl

This is what would happen if chocolate + caramel + oatmeal cookie had a baby.  It would be a Carmelita - a gorgeous bar that is so delish.  If you love all those things, you're going to love this bar.  It's sweet, but highly addictive - you've been warned;)

Carmelita

In a bowl, combine and mix well
3/4 c. melted butter
3/4 c. brown sugar

Add in and mix together
1 c. flour
1 c. oats
1 tsp. b. soda

Spread/pat 1/2 the cookie mixture into a greased or parchment lined 8x8 pan and bake at 350 for about 10 minutes

In a saucepan add in a melt until smooth
32 unwrapped caramels
1/2 c. heavy cream

Onto the baked base, sprinkle
6-8 oz chocolate chips
Pour the caramel over top
Crumble the remaining cookie dough over top.

Bake at 350 for another 15-20 minutes until golden.

Remove and let cool before cutting  (*you can put it into the fridge to speed things up)
