I was going thru my collection of Ricardo magazines (does anyone else remember these magazines?) and found this issue that had quite a few banana bread recipes in it. I loved this magazine and was so sad when it went to being a strictly french magazine for Quebec. I still follow him on his website, but it's not quite the same as the magazine. I have to say, I've tried quite a few of his recipes and have never been disappointed. This Banana Loaf recipe is really good. I know, there are so many banana loaf recipes around, but this is my new favorite. There is something about the flavour - I think it's all the brown sugar in the recipe that gives it an almost caramel flavour. The sour creme leaves this incredibly moist and the dark chocolate does not disappoint. So, really, try this one - it's a winner!

Banana Dark Chocolate Loaf
Into a bowl, sift together and set aside
2 c. flour
1 tsp. b. soda
1/4 tsp. salt
Into another bowl, mix together and set aside
1 c. ripe bananas - mashed (about 2-3 bananas - the riper the better)
1 c. sour cream
Using a mixer, cream together until well mixed
2 eggs
1 1/2 c. lightly packed b. sugar
1 tsp. vanilla
Add to the egg mixture in a thin stream
1/2 c. canola oil
Stir in the dry ingredients, alternating with the bananas until combined.
Add in
1/2-3/4 c. dark chocolate chips or chopped chocolate.
Line your loaf pan with parchment paper
Bake at 350 for about 40-50 minutes but really depends on the size of your loaf pan.
