Happiness is a Bowl of Cherries!
Needing a dessert to treat your special someone on Valentine's Day? Well, I'm going to say 'you're welcome' right now because this dessert is the one you want. It's really a version of a no bake cheesecake. The red cherries on top makes it valentine worthy, the filling is light and satisfying and with the graham cracker crust - can't miss on this one. This recipe would be good done in individual servings as well - do the layers as stated but put it in a footed glass, small mason jar - whatever you have on hand - a bit more work, so if you're in a time crunch, just do the 9x9 version.
Let's get to the recipe . . .
Cherry Delight
Bottom Layer
1 1/4 graham wafer crumbs
1/4 c. sugar
1/3 c. melted butter
Stir together and press into the bottom of a 9x9 square or round.
Filling
In the bowl of your stand mixer, beat until smooth
1 8 oz cream cheese (room temp)
When creamed add in and mix together
3/4 icing sugar
2 tbsp. fresh lemon juice
1 tsp. vanilla
3 c. cool whip (an 8oz container)
Spread over the graham cracker crust.
Top with cherry pie filling.
Pop into your fridge (overnight is best, but if pressed for time a couple of hours will be ok too).
Cut and serve!
