Have you tried grapes in your chicken salad? If you have, then I may have missed this boat. I found a recipe for this and thought I'd give it a try. If you haven't, you really must. The sweetness of the grapes (and they're really good right now), the crunch of the celery and the creaminess of the mayo combined with the chicken on a fresh croissant - well, it's so darn delish, I'll never have it without. It's incredibly easy, you can make it ahead and store it in the fridge and boom, supper or lunch is done. The perfect summertime sammie:)
Let's get to it.....
Chicken Salad
In a bowl combine and mix together
1 c. cooked chicken, chopped
1/4 c. chopped celery
1/4 c. red seedless grapes halved
1/4 c. mayo
pinch pepper
Pile the salad onto a croissant, into a sandwich or even as a topping for a bed of lettuce.
Store the chicken salad mixture in fridge for 1-2 days.
