Orange + Chocolate = Irresistible Orange-Chocolate Muffins
I've been a fan of this muffin combo ever since Magpies Kitchen introduced them to me. The orange with a bit of chocolate - heaven! Is it a healthy muffin, ummm, no but are they delish and give you happiness in every bite, ummm, YES! So let's stop this chit chat and get to the recipe:)
Here we go . . .
Orange Chocolate Chip Muffin
Add to the bowl of you stand mixer, using the paddle, beating until creamy
1/2 c. unsalted butter (room temp)
Add in and beat for another minute
1/2 c. sugar
1.4 c. b.sugar
Add in and mix until combined
2 lg. eggs
1/2 c. sour cream
2 tsp. vanilla
zest of 1 large orange or 2 small
Gently, mix together (by hand)
1 tsp. b. soda
1 tsp. b. powder
1 3/4 c. flour (spooned into measuring cup)
1/2 tsp. salt
Stir in and mix
2 tbsp. orange juice
2 tbsp. milk
Add in
3/4 c. chocolate chips (or more if you like)
Spoon into greased or papered muffin tins.
Bake at 425 for 5 minutes, then turn the oven down to 350 and bake for another 12-15 minutes.
Remove, let cool for a bit and glaze.
Combine, and mix until drizzle consistency
1/2 icing sugar
1-2 tbsp orange juice
Enjoy!
