You all know I'm not a pie maker but my husband and son-in-law love pecan pie. So, this is my compromise - Pecan Pie Bars. They are super easy and got the 2 thumbs up review from both of my testers. They are not too sweet - just the right amount of sweetness, a good amount of crunch from the pecans and a shortbread, buttery base - what's not to love? You could serve them like pie, with vanilla ice cream or a nice afternoon snack when those sweet cravings hit!
Pecan Pie Bars In the bowl of your stand mixer, cream together 3/4 butter - room temp. 1/3 c. sugar Slowly add - cover your mixer with a teatowel - you'll thank me later;) 1 3/4 c. flour Mixture will be dry. Press into an 9x11 pan that you've lined with parchment paper (this makes taking the square out sooo much easier) Bake at 350 for 15-18 minutes until lightly golden.
While the crust is baking... In a large bowl, mix together, stirring until smooth 2/3 c. b. sugar 1 1/2 c. corn syrup 4 eggs 1 tbsp. vanilla Add in and mix until smooth 6 tbsp flour 1 tsp. sea salt Add in 1 1/2 cups chopped pecans
Remove crust from oven and pour the syrupy mixture over top.
Pop back into oven for about 25-30 minutes, until the centre is set.
Cool, cut into bars and pop into fridge until you're ready to serve. (These can be easily frozen for later enjoyment!)
