I was browsing my favorite baking sites when I came upon these Grinch cookies from The Recipe Critic. I thought this was such a clever idea! The cookie base is really just a chocolate chip cookie recipe but as I'm always on the lookout for a really good cookie recipe, I tried this one. It was pretty darn good! In fact, I took the cookies to work and they disappeared pretty fast, so I think the cookie recipe was all right - lol. Wouldn't this be a fun cookie to have while watching the classic movie 'the grinch who stole christmas' ? 


Grinch Cookie


Combine and mix with your mixer, until light and fluffy
1 c. unsalted butter
1 2/3 c. sugar
Add
2 eggs (one at a time), beating between each egg
Add in
2 tsp. vanilla


Add to this mixture your food coloring - I started with about a tablespoon of mixture and started adding food coloring until I got the color I wanted. I started with yellow and added in a tiny bit of green and a tiny bit of blue - it's a bit of playing but lots of fun! Then add your color to the rest of the mix (I didn't want to ruin the whole mixture if I couldn't get the color right - that's why I started with a tablespoon)


In separate bowl mix together
3 1/3 c. flour
2 tsp. cornstarch
1 tsp. b. powder
1 tsp. b. soda
1 tsp. salt
Stir into colored mixture.


Add in 1 1/2 red and green M& M's


Chill dough for about 30 minutes.


Drop onto parchment lined baking sheet and bake for about 9 minutes at 350 (time varies depending on how big you make your cookies)


Remove and let cool (if you can!)
