Found this recipe in an old Quick Breads magazine. I love dates and was intrigued by the fact that there was no added sugar to the loaf. I have to say that this is a very good loaf! It's nicely sweet, great texture and the nuts add a bit more punch to the loaf. You really don't need the icing that this recipe showed - it's quite perfect without, but go ahead, have the icing - you deserve it;)
Let's bake. . .
Maple Date Pecan Loaf
Into a bowl add in and let stand for 10 minutes
1 c. chopped dates (pitted)
1 1/4 c. boiling water
3 tbsp. butter
In a separate bowl add
1 1/2 c. flour (whole wheat or all purpose)
1 tsp. b. powder
1 tsp. salt
3/4 tsp. b. soda
Make a well in the centre of the dry ingredients, add in and stir
3/4 c. maple syrup
2 eggs, lightly beaten
Add in the date mixture, which should have softened up.
Stir until moistened.
Add
1/2 c. toasted pecan pieces (toasting is optional)
Pour into a parchment lined loaf pan
Bake at 350 for about 40-50 minutes (depending on the size of your loaf pan).
Toothpick should come out clean.
(If loaf is getting too brown, cover with foil for the last bit of baking time)
Cool in pan for 10 minutes, remove to to wire rack.
You can stop here, but if you like icing on your loaf, or you want to make it a bit more fancy, keep reading.
Icing
Into a bowl, add in and stir until smooth
1 c. icing sugar
2 tbsp maple syrup
1 tbsp. melted butter
*If needed to get to the right consistency, add in a bit of milk or cream.
Spread over top of the loaf.
