Let's take one of the most baked muffins but make it mini! There are so many banana muffin recipes - just about as many as there are for chocolate chip cookies, so of course, I have to work my way thru them! This recipe is pretty ordinary in ingredients and as for ease of baking - very simple. The result - excellent! I changed the recipe to mini - just felt that a 1 bite muffin was a great way to have some fun with the recipe. Did everyone like the mini - a resounding yes - didn't you hear it- lol.
Let's get to the recipe. . .
Mini Banana Chocolate Chip Muffins
Into a bowl, mix together
3/4 c. sugar
3 ripe bananas (mashed) - the riper the better
1 egg
1/2 c. oil
1 tsp. vanilla
Add in and mix to combine (don't overmix)
1 1/2 c. flour
1 tsp. b.soda
1/2 tsp. salt
Add in 1/2 c. mini chocolate chips - you can add more if you like;)
Spoon into greased, mini muffin or tart pans.
Bake at 375 for about 8 minutes - depending on your oven.
Let cool for a couple of minutes, then remove to a wire rack to cool.
