A Chocolate Chip Cookie but Make it Mini!
This is a recipe from Ricardo Cuisine. He used to have a gorgeous magazine that was Canadian and full of great recipes. He has since shut down the English magazine and I think he has gone only French. His website has the ability to translate and it's a resource I go to often. Anyway, enough about that, let's get to the recipe. He says this is the ultimate - I have to say, it was pretty darn good - I didn't get to taste too many - they disappeared pretty quick! but what I did taste was delish. The only change I did here was to make them into mini cookies. I just love the look of a mini cookie and they're perfect for little hands:)
The Ultimate Chocolate Chip Cookies
In a bowl, combine and mix together
3/4 c. unsalted butter, melted
1 c. packed b. sugar
2 tbsp. sugar
Add in and mix until smooth
1 egg
1 egg white
Stir in
1 1/2 c. flour
1/2 tsp. b. soda
pinch of salt
1/2 c. (approximately) mini m& m's or chocolate chips or a combo like I did.
Pop into the fridge for an hour or overnight.
Drop by 1 tsp. onto baking sheet - or whatever size you like.
The mini cookies took about 6-7 minutes, but if you're doing a bigger cookie, you'll have to adjust the baking time.
Bake at 350 until golden brown - don't overbake:)
Enjoy
