Super Fast, Super Easy Chicken Enchiladas For Busy Nights

Here's an easy, and I mean easy, dinner idea! If you know you've got a busy week, or are just wanting to add to your taco Tuesday lineup, this is something that doesn't take a lot of thought or time.

Let's get to it. . .

Chicken Enchiladas

8 tortillas
1 rotisserie chicken, shredded
1-2 jars enchilada sauce
tex mex cheese


Spread each tortilla with enchilada sauce
add chicken down the centre
top with cheese
roll the tortilla and place in a 9x12 baking dish
Repeat for all 8 tortillas

Top with remaining enchilada sauce and cheese.

Bake at 350 until the cheese is golden and melted.
