So how was your week? At the shop we celebrated Carol's birthday, and in her honor I made one of her favorite bars - the marshmallow bar. This bar is so incredibly easy and fast to make, you can see why this is a classic - just like Carol; This bar only has 4 ingredients and 2 two steps - easy peasy! Marshmallow Bar In a saucepan melt together and stir until smooth 1/4 c. margarine 1/2 c. smooth peanut butter Add in and stir until melted 1 c. butterscotch chips In a large bowl add 5 cups mini marshmallows When the peanut butter mixture has cooled slightly, pour over the marshmallows (if it's too hot your marshmallows will melt) Press into a 9x9 pan that has been lined with parchment paper (I use a bit of margarine or peanut butter on the pan to keep the parchment paper from moving around) Pop into your fridge until the bar has set and then slice into bars.
