Do you have food allergies in your family? It seems dairy is a big one for a lot of people. So I found this really great brownie @tasteofhome. You won't even notice that there isn't any butter in this recipe. It's more of a cake style brownie, but it's super quick to make, has great taste and texture and of course the added chocolate chips to the top score big for extra chocolatey taste! This recipe makes a 9x11 or 9x13 - whatever size pan you have and I just want to say - it won't be too much! These disappear in a minute, so ahead and make the full batch - if you do have leftovers - pop them in your freezer - they won't go to waste;)
Dairy Free Brownies
Add to a bowl and whisk until mixed
2 c. sugar
1 3/4 c. flour
1/2 c. cocoa
1 tsp. salt
In a separate bowl (a bit larger bowl as you'll add the dry ingredients to this), beat together
5 large eggs
1 c. canola oil
2 tsp. vanilla
Add the dry ingredients to the wet and mix until smooth. (I did it by hand but you can use a mixer)
In a prepared 9x11 or 9x 13 dish (I like to line mine with parchment paper for easier removal of the brownie but you can just grease the dish as well - if doing dairy free, use a dairy free non-stick spray or lightly grease with a vegetable oil)
spread brownie mixture into your baking dish and sprinkle with
1 cup dairy free chocolate chips
Bake at 350 for about *22-30 minutes until toothpick comes out clean. (*depending on size of pan)
Let cool and cut into squares.
