We have a new spice in the shop - Apple Pie Spice* - and I've wanted to use it since it arrived. I'm not a pie maker, so I've been looking for something else to use this in. I found these really healthy breakfast muffins and decided to use the spice in these. They turned out beautifully! This muffin has a really nice crumb for being a muffin that uses a different kind of flour, has great taste and is simple to make. The spice blend is perfect - just the right mix of cinnamon, nutmeg and cardamom - how easy is that - no need to buy all those spices and wonder how much of each to use - all the work is done.

Apple Oatmeal Muffins
In a large bowl combine
1 1/2 c. oat flour (you can make your own by putting your oats into a food processor and blending until flour consistency)
1 c. oats
2 tsp. A Spice Affair Apple Pie Spice *
1/2 tsp sea salt

In a separate small bowl, whisk together
1 c. oat milk (room temp)
1 egg (room temp)
1/2 c. maple syrup
1 tsp. vanilla
1/2 c. vegetable oil

Mix the wet ingredients into the dry and let sit for about 10 minutes. The mixture will thicken as it sits and the oats are rehydrated.

While that is sitting, dice
1 medium apple (I used a honeycrisp)

Gently fold the apples into the batter and spoon into 12 prepared muffin tins (either line with paper muffin cups or lightly grease your pan)

Bake at 350 for about 20-25 minutes until tops are golden and pop back up when you gently press down.
