So here's the thing. How often do you discard berries that have gone soft? I seem to have to get rid of some every week - strawberries, raspberries, whatever I haven't quite finished before they've gone past the point of eating fresh. It always bothers me to discard produce that I haven't eaten (just don't like throwing my $$ away) So here's my solution. I make them into a compote that I use in my yoghurt or on my desserts! Super easy, tasty and you can make it as sweet as you like.
Here's how I do it. . .
Into a saucepan
Add in
Fruit - I use any berries that I have left
Sweetener - you can use sugar, but I like to use maple syrup
I use a bit of orange zest for flavor.
I like to use a good splash of maple syrup for about 1/2-1 cup of fruit. I use enough to make it saucy on the bottom of the saucepan.
Bring to a boil, give the fruit a bit of a mash, let simmer until the fruit has reduced.
It doesn't take long after it's come to a boil - maybe 5 minutes or so.
Remove and add in a bit of vanilla or cinnamon - you choose, or leave it out - entirely up to you.
Let cool.
Serve over yogurt, cheesecake, ice cream - whatever you like!
