This has to be one of my top 10 recipes! It's a fan favorite in my house and is requested often! It's very much like a coffee cake, but it's also a great dessert option. The sour cream in the recipe keeps this cake moist, the streusel in the middle is perfection and the added streusel on top, well, it's just so darn good! It's an easy recipe, no crazy ingredients and you'll be loving this to use up those ripe bananas;)
Let's get to the recipe. . .
Banana Cake with Chocolate Chip Streusel
Streusel
Mix together
1/2 c. b. sugar
2 tbsp. cocoa
1/2 c. flour
Add in and using your fingers, make this into pea sized pieces
1/4 c. butter (I like to use frozen butter and grate it)
Add in 1/2 c. chocolate chips (I prefer mini chocolate chips)
Set aside
Banana Cake
Into the stand of your mixer, add in and mix until creamy
3/4 c. sugar
1/2 c. unsalted butter, room temp
Add in
1 egg
1 1/3 c. mashed ripe bananas (about 3 bananas)
3 tbsp. sour cream
Whisk together and add to the banana mixture
1 1/2 c. flour
3/4 tsp. b. soda
3/4 tsp. b. powder
1/4 tsp. salt
Grease or line your 8x8 pan with parchment paper.
Add 1/2 the banana batter to the pan
Sprinkle 1/2 the streusel over top
Carefully, by spoonful, add the rest of the banana cake over the streusel
Sprinkle the remaining streusel over top.
Bake at 350 for about 30-40 minutes, until a toothpick comes out clean and the top bounces back when gently pressed.
