It's January. It's the start of the New Year! It's 2026 filled with possibilities. If you are interested in astrology (I admit it, I am) this is a year of beginnings, transformation, clarity, and emotional renewal. So let's start with being good to our selves and our bodies! Here's a recipe for a home made granola, filled with all kinds of good stuff that your body will love. It's a great recipe to get your kids involved in - it's easy and it's never to early to start a love of baking (my grandkids love making granola with me;) We grab this by the handful for a quick snack and we really like it on our granola - I mean who doesn't love something crunchy with their granola?
Let's get to the recipe. . .
Cranberry Granola
Into a large bowl add in
3 c. oats
1 1/2c. almonds or whatever nuts you like - use a combo or use just 1 kind. I also like mine slivered or in pieces but whole is fine too.
1/2 c. hemp hearts
1/2 c. pumpkin seeds
Into a small bowl, add in and mix
1/2 c. coconut oil - melted
3/4 c. maple syrup
2 tsp. cinnamon
1 tsp. ginger
1/4 tsp. cloves
Mix the wet with the dry, making sure that all the oats are coated with the wet.
Spread onto a parchment lined baking sheet.
Bake at 350 for about 20 minutes - stir 1/2 way thru.
Remove and let cool.
When cool, break into chunks and add in
1/2 c. dried cranberries.
Store in a sealed container.
