In one of my favorite cookbooks - Plant over Processed by @earthyandy, she has a recipe for a magic cookie that you make with chickpeas. I can't say I'm a chickpea fan, but I thought I'd give these a try. In her cookbook she challenges you to make them, so... what have I got to loose except some time and chickpeas - lol. Here we go - my critique on these 'magic' cookies. Are they magic - yup, they sure are! They are pretty close to a chocolate chip cookie in texture but not as sweet. If you're going to go head to head, bite to bite when you taste these, you are likely going to go for the high sugar regular chocolate chip cookie, but and it's a big but! These are really, really good if you are looking for a healthy version of a chocolate chip cookie. These are incredibly satisfying and the great thing is that they fill you up so you don't end up eating as many as you would a regular cookie. Is it fair to compare to a sugary chocolate chip cookie - you be the judge but I have to say, I just bought more chickpeas because these will be on repeat in my house:) Let me know if you took the challenge - I'd love to know what you think!


Magic Cookies
In a food processor, add in and blend until smooth
1 1/2 c. chickpeas (remove the liquid from the canned chickpeas)
1/2 c. natural peanut butter
1/3 c. maple syrup
1/2 tsp. b. soda
pinch of sea salt


Stir in chocolate chips - recipe called for 1/2 c. but I used about 3/4 c. - you can use vegan if you like.


Drop onto parchment lined cookie sheet and bake for about 20 minutes until golden brown.
