Do you consider a day without chocolate an emergency? It kind of is for me - lol. I found this recipe and it was titled 'emergency brownies'. I felt like it was calling me! It's made in one bowl, not too many ingredients and my house smelled heavenly while it was baking. (I must confess, I doubled the recipe - who makes a small pan of brownies?!) The result - perfectly chocolate brownies that hit the spot. My only question with these is the dutch process cocoa - I happened to have some and I'm pretty sure regular cocoa would work - if you know the answer - please comment!
Emergency Brownies
Melt in your microwave 1/2 c. butter, until just melted
Add and whisk until combined 1 c. sugar
Return to microwave and heat until hot to the touch
Whisk in 1/3 c. dutch process cocoa 1/4 tsp. sea salt spash of vanilla
Add in 2 large eggs, whisking until the mixture is shiny (about 1 minute)
Fold in 1/4 c. flour 1/4 c. chocolate chips
Pour into a parchment lined 8x8 pan. Bake at 350 for about 30-35 minutes
