I love the scent of an Apple Crisp baking in my oven. The deliciousness of the apples and cinnamon is so warm and inviting, you just know something good is on the way. It's such a comfort food kind of dessert that I love serving when I roast a chicken for Sunday supper. Last week my produce drawer in the fridge seemed to have an awful lot of apples that were good for baking but not so good for eating so an Apple Crisp seemed in order, and yes, roast chicken too! I found this recipe for a gluten free crisp and really, no one will ever know that it's gluten free!

Let's get to the recipe. . .

Gluten Free Apple Crisp

Into a bowl, add in and stir together
5 c. peeled and sliced apples (I like to use an assortment - granny, honey crisp or whatever I have in the fridge)
2 tsp. lemon juice
2/3 c. b. sugar
1/3 c. maple syrup
1 tsp. vanilla
1 tbsp. cornstarch
1 1/2 tsp. cinnamon

Spoon your apple mixture into a greased 9" pie dish, 9" square or even into individual rammekins.

Topping
Mix together
2/3 c. b. sugar
1 c. rolled oats - gluten free
1/2 c. almond flour or meal **
1/2 tsp. cinnamon
1/8 tsp. salt
1/3 c. melted unsalted butter
This should be crumbly.

Spread onto the apple mixture and bake at 350 for about 35 minutes, until golden and bubbly around the edges.

Serve warm with ice cream:)

**if you don't have almond flour, you can use 1/2 c. slivered almonds, plus 2 tbsp of oats from the recipe - pulse them in your food processor or coffee grinder until a meal/flour has formed. Be careful not to turn it into almond butter.
