Do you have friend you love sharing recipes with? Here's one from a fellow baker that always finds good recipes! This is one she cut out of the newspaper (yes, there are still a few of us who get the paper, lol) when Harry and Meghan got married. It's a recipe from the Bakery that made their Royal Wedding Cake and after you taste this you'll know why they picked this Bakery to make their cake. This cake is amazing. That is all I really need to tell you. But. . . here is my review on this recipe. There is not one thing I would change - the flavor, the texture - all 10/10. The only difference with this recipe is that we added lemon curd (that we sell at the shop) into the middle of the loaf - this is not needed but it sure tastes delish in this loaf.

Lemon Lovers Loaf

Using your stand mixer, cream together (do not overmix, you do not want this fluffy)
1 c. plus 3 tbsp. unsalted butter, room temp.
1 1/3 c. sugar

Add in
zest of 3 or 4 lemons

Beat in 1 at a time
3 eggs

In a large bowl, whisk together
1 3/4 c. plus 2 tbsp. flour
1 1/2 tsp. b. powder
1/4 tsp. salt

Mix half the flour mixture into the butter

Add in
6 1/2 tbsp. milk

Add in remaining flour mixture, mixing until just combined.

Spoon half the batter into a greased or parchment lined loaf pan.

Spread about 6-8 ounces of lemon curd*(you can eyeball this) over the batter.

Carefully drop, by spoonfuls, the rest of the batter over the curd.

Smooth the top.

Bake at 350 for about 50-60 minutes, until toothpick comes out clean.

Lemon Drizzle
In a saucepan, heat until the sugar is dissolved - do not let this boil
1 tbsp. sugar
1 tbsp. water
2 tbsp. lemon juice

Remove loaf from oven and poke holes with a skewer.

Spoon the lemon drizzle over the cake, letting it sink into the holes.

Let the loaf sit for a few minutes, enough so that when you remove the loaf it doesn't fall apart - you want it to still be warm when you pour the icing over top.

Remove the loaf onto a cooling rack with parchment paper underneath - the next step can get messy.

In a small bowl, whisk together and spoon over top of the loaf, letting it drip down the sides.
1 3/4 c. icing sugar
2-4 tbsp. lemon juice
*you should be able to drizzle this over top of the loaf easily. If not, add a bit more lemon juice.

Let rest until it's cooled.
