I was lucky enough to be given some saskatoons last week. I've always said that I don't like saskatoons (don't know what I was thinking) - but I've just discovered I was wrong - I like them a lot! They were so sweet and juicy and just begging to be put into some muffins. I found this healthy-ish recipe and thought I'd give it a try. No processed sugar, whole grain and super easy to put together. If you don't have saskatoons, sub in blueberries - they'll work just fine)
Saskatoon Honey Muffins
In a small bowl mix together
1 c. buttermilk
1/3 c. olive oil
1/3 c. honey
1 large egg
zest of 1 lemon
In a large bowl, whisk together
1 1/2 c. wheat bran
1 c. whole wheat flour
1 1/2 tsp. b. powder
1 1/2 tsp. b. soda
1/4 tsp. fine sea salt
Pour the wet ingredients into the dry and mix until just combined.
Gently add in
1 cup saskatoons (or sub in blueberries)
Spoon into greased or paper lined muffin tins *
Sprinkle
2 tbsp. turbinado sugar over top of the muffins (optional)
Bake at 350 degrees for about 15 minutes (my oven runs hot so may be a little longer in your oven)
* the recipe says this will make 12 muffins but I got 6 nicely sized muffins from this recipe.
