Pancakes - yum! I found this recipe on lots of sites and since it seems to be a popular thing I'd thought I'd try it. I'm thinking it would be the perfect long weekend breakfast or even a healthy dinner - who says you can't have pancakes whenever you want? When my kids were little, pancakes were always a dinner option! This recipe is a healthy pancake recipe, comes together in 1 bowl (ok, blender) and is really easy. Was I surprised - yes! I wasn't expecting this pancake to be so good and the best part was I didn't feel like I had over indulged they way you do with regular pancakes - you know, like you need a nap after you eat them. So... I highly recommend trying this healthy version - you get your pancake and your body feels good too;)
Banana Oatmeal Pancakes
Add to your blender and blend until smooth 2 medium ripe bananas 2 eggs 1/2 c. unsweetened almond milk 1 tsp. vanilla 1 1/2 c. oats (use gluten free if you're wanting that option) 2 tsp. b. powder 1/2 tsp. cinnamon 1/4 tsp. salt
Lightly coat your griddle or frypan with a bit of olive oil or veg. oil. Once pan is hot, add the batter, making the pancakes whatever size you like. Cook for about 2-3 minutes (depending on size) until they puff up and you can see bubbles in the batter - flip and cook until bottom is golden. *if your pan starts to smoke - your pan is too hot. Wipe skillet between pancakes and add a bit more oil before your next batch.
This makes about 9 pancakes, using 1/3 c. batter for each one.
Serve with syrup.
*pancakes may be frozen for mornings when time is important:) -freeze on a baking sheet so they aren't touching for about 30 minutes and then place into freezer safe containers.
