A Perfect Banana Bread!

Another Banana Bread recipe you say?   But wait. . . this is a bit different.  This is Chrissy Teigan's famous Banana Bread and let me tell you, it is delish!! It has vanilla pudding, coconut and dark chocolate chunks and you bake it in a bundt pan.  I have to say, the coconut almost lost me but, no, it's perfect in this bread.  Everything about this comes together beautifully, no wonder it took her a year to perfect.

Let's bake. . . 

Chrissy Teigan's Banana Loaf

Into a bowl, add in and mix together
2 c. mashed very ripe bananas
4 eggs
2/3 c. canola oil
2 c. sugar

Gently fold in 
1 (3.5 oz) box vanilla instant pudding
2 c. flour
1 tsp. b. soda
1 1/2 tsp. salt
1 c. unsweetened shredded coconut

When just about combined add in
1 3.5 oz dark chocolate bar chopped into chunks

Pour into a greased bundt pan.
Bake at 325 for about 50-60 minutes, until the cake springs back when touched and tooth pick comes out clean.

Let cool for a few minutes, remove from pan to cooling rack.
