A Snack You Can Feel Good About
Looking for a healthier snack? I know I always am. I confess, I am a snacker and a snacker with a sweet tooth:( This recipe seemed to a be a good compromise for a sweet snack and a healthier snack. It's very easy to make, it's not super sweetand it has good texture. My only suggestion, make a double batch;)
Let's bake. . .
Granola Bars
Into a bowl add in and stir together
3 c. oats (gluten free if needed)
3/4 c peanut butter (I used natural) (if your peanut butter is stiff, just microwave it for 10-15 seconds - it will be easier to stir in)
1/3 c. honey or maple syrup (I like honey)
2 eggs
1/2 c. mini chocolate chips (optional)
Line a 9x9 pan with parchment paper and very firmly press the granola mixture into the pan.
Bake at 350 For about 14-17 minutes, until the edges are golden and the center is baked thru.
Remove, place on cooling rack and let cool completely before cutting the bars.
