It's sometimes a challenge to find a dessert or sweet treat that can be dairy and gluten free but I found one. This recipe is so deliciously good that if you make it with the diet modifications, no one will even begin to know the difference. It's chocolatey, peanut buttery and the slight crunch of rice krispies makes it highly addictive. Here's the best part - it's super simple to make and the ingredients are pretty easy too.

Peanut Butter, Chocolate Rice Krispie Bar
Melt together (on the stove or in the microwave)
1 c. smooth peanut butter
1 c. semi sweet chocolate chips (dairy free if needed)
1/2 c. butter (dairy free if needed)
5-6 cups mini marshmallows
Stir until smooth and pour over
2 cups rice krispies (use gluten free if needed - I get mine from Superstore)
Spread into a parchment lined 8" square baking dish.
Pop into the fridge for a couple of hours.
