Can it be Spring without a Mini Egg Cookie?

There is one thing that my family has multiple group texts about.  Mini Eggs.  Where to get them, best price and how many we've eaten before Easter!  (I know, it's a real problem lol)  OK, enough about that.  Here's a recipe that everyone seems to be making - mini egg cookies.  This recipe is a take on the chocolate chip cookie, just adding in crushed mini eggs - brilliant, right?

Let's bake. . .

Mini Egg Cookies

Into the bowl of your stand mixer,
Mix together until light and fluffy
1 c. butter (room temp)
1 c. b. sugar
1/2 c. white sugar

Add in
1 egg
1-2 tsp. vanilla

Add in and mix carefully (add the flour a bit at a time so it doesn't go all over your kitchen)
2 c. flour (spooned into the measuring cup)
1/2 c. oats
1 tsp. b. soda
1/2 tsp. salt

Add in
1 c. crushed mini eggs
1/2 -1 c. chocolate chips (I used milk chocolate but semi sweet works too)

Measure 1/3 c. dough for each cookie and place onto the baking sheet - these are a generous cookie!

Bake at 350 for 10 minutes, until the edges are lightly golden.
