How do you like your granola? In a bowl, sprinkled over yogurt or in a bar form? Well, I love it all those ways but thought I'd make a bar this week for something a little bit different than my usual. This bar has a chocolate base which makes it a whole lot of delish! It has great texture, good stuff in it and is very satisfying as a snack or treat. It comes together quickly and doesn't take much effort!

Let's get to it. . .

Chocolate Honey Granola Bar


In a bowl, add in and stir
2 c. oats
1 c. coconut
1/2 c. ground flaxseed or wheat germ
1 c. walnut pieces
1/2 tsp. salt

In a saucepan, melt together, stirring until smooth
1 c. chocolate chips
2 tbsp. butter
1/2 c. honey

Add in 1 tsp vanilla to the chocolate mixture.

Pour the chocolate over the oat mixture, stirring until combined.

Press into a parchment lined 8x8 pan, making sure it is well pressed into the pan. (I cover mine with parchment (so I don't stick to the bar) and really press with the back of a measuring cup or your hand.

Bake at 350 for about 18-20 minutes.

Let cool completely before cutting into bars.
