Ice cream Sammies are a staple in our house. I'd like to say during the summer but I'd be lying - we have them all year long! I came up with the idea for this cookie when we were doing a photoshoot for our website a couple of weeks ago. Carol had bought some mint chocolate chip ice cream for our ice cream story (you may have seen it on instagram) featuring some of the bowls we have in the shop. I haven't had this flavor of ice cream in a long time - it's deliciously minty with a nice chocolate bit in it - perfect to make an ice cream sammie. So... this sammie tastes just like the mint chocolate girl guide cookie - I kid you not! It's perfectly balanced in mint and chocolate and is extremely satisfying, a must have for your freezer and a delish treat on a hot summer day;


Chocolate Brownie Cookie
(this makes about 12-15 cookies)

Melt together being careful not to burn it.
8 oz. semi sweet chocolate chips (225g)
3 tbsp. butter (45ml)

In a small bowl combine
1/4 c. flour
1/4 tsp. b. powder

In another small bowl, whisk together
2 eggs
1/2 c. b. sugar

Add the chocolate mixture to the egg mixture.
Add the flour mixture to the above.

This batter is quite runny - don't be alarmed.

Spoon onto a parchment lined baking sheet making them into rounds - they spread so leave room between the cookies.

Bake at 350 for about 9 minutes, until set.

Remove and let cool.

To make the sammies.

Place cookie face down and add a generous scoop of slightly softened mint chocolate chip ice cream.
Place 2nd cookie on top and press down - be gentle and go slow so the cookie doesn't crack.
You can go ahead and eat them now or you can package them individually and store them in the freezer.
