It's Strawberry Season!

This is a recipe from one of my favorite bakers - Preppy Kitchen.  I've made quite a few of his recipes and they never disappoint.  This recipe seemed to be the perfect loaf for this time of year - it's almost strawberry season and right now, the strawberries in the grocery store are really good!  My review on this loaf - winner, winner!  It's so moist and tender, just the right amount of flavour and it's so pretty to look at!  My tasters loved this recipe - comments were - 'this is so good', 'it's not mushy from the strawberries', 'love this' and 'can I get the recipe'.  

Let's bake. . . 

Strawberry Bread

Mix together
3/4 c. sugar
1/2 c. whole milk
1/2 c. vegetable oil
1 large egg
1 1/2 tsp. vanilla

In a separate bowl, whisk together
2 c. flour
2 tsp. b powder
1/2 tsp. salt

Add the dry mixture to the wet, stirring just until combined.

In a small bowl, toss together
2 c. diced strawberries (don't leave the strawberries too big, you truly want them diced)
2 tbsp. flour

Gently fold the strawberries into your mixture.

Pour the batter into a parchment lined loaf pan.
Bake at 350 for about 50-60 minutes - depending on the size of your loaf pan.  If you pan is longer and narrow, start checking at 40 minutes.  Bake until the top pops back up when lightly pressed or when a toothpick comes out clean.

Glaze
Mash 
3 tbsp. diced strawberries
Add in and mix together
1 c. icing sugar
1 tsp. whole milk
Spread over the cooled loaf.
