A cookie pie?! What?! A brilliant idea:) I used to do a cookie on a pizza pan but as a pie - well, you know I had to make it. I just happened to have a vintage piece of Emilie Henry in the shape of a heart, so thought I'd give this a try to see if it will be Valentine's Day worthy. Was it? Yes it was - pretty darn delish. Sweet, chocolatey and the texture of a cookie.
Toffee Chip, Chocolate Chip Cookie Pie
In a large bowl add in and mix together 1 c. unsalted butter, melted 1 c. b. sugar 1 c. sugar
Add in and mix well 1 large egg (eggs should be at room temp) 2 large egg yolks 2 tsp. vanilla
Add in and mix together until combined, but don't overmix 2 c. all purpose flour 1/4 c. cornstarch 1/2 tsp salt
Add in 3/4 c. skor bits 1 c. chocolate chips 1 c. milk chocolate heart shaped chocolate chips* - just use all chocolate chips if you don't have these.
Lightly grease a 9" baking dish and press the cookie into the dish.
Bake at 35 minutes or until the top is golden, center can be a bit jiggly. Sprinkle a few heart shaped chocolate chips over top of the hot cookie.

We love to eat ours slightly warm with a big scoop of vanilla ice cream!
