Cornflake Cookies, A Sweet Take on Cereal

A no bake, super easy, delightfully sweet, chewy treat!  Really, just melt a few things together, stir in some cereal and abracadraba, you're done!  So, no more chatting, let's get to it. . .

Cornflake Cookies
Into a large bowl,  add
6 cups plain cornflakes

Into a saucepan add in the following
1 c. corn syrup
1 c. sugar
1 tsp. salt
1 c. creamy peanut butter
Cook over medium heat, stirring constantly, until the mixture begins to bubble.
Remove from heat.
Add in
1 tsp. vanilla

Pour over the cornflakes, mixing until the cornflakes are covered.

Use 2 spoons or a large cookie scoop, and working quickly, drop onto parchment or wax paper.

Allow to cool, store in airtight container.
