I'm always looking for something a little bit different to add to one of my tried and true meals. Taco in a bag is a family favorite - it's easy, delish and everyone enjoys it.
So, I made this recipe as a side dish just to give it a try. I have to say it's pretty darn good! It's a good meatless, gluten free dish that is really satisfying and very easy to put together. Give it a try, especially if you love Mexican dishes!
Cheesy Tortilla Skillet
In your skillet add in and heat until hot
2 tbsp olive oil
Add in
1 med. onion - chopped or minced
2 bell peppers - chopped
*you can also add in 2 poblano peppers if you have or want
2 tsp. chili powder
2 tsp. smoked paprika
1 tsp. cumin
1 tsp. dried oregano
pinch salt
pinch fresh ground pepper
Cook, stirring occasionally for about 8 minutes
Add in
garlic - your choice as to how much or if you want any. Recipe suggested 4 cloves - grated into the skillet.
Stir in
1 1/4 c. red enchilada sauce
1 c. cooked rice
juice of 1 lime
1 can black beans (rinsed) - about 15 oz
Sprinkle
1/2 c. shredded Mexican cheese blend over top
Add
2 c . tortilla chips, pressing them gently into the cheese
Sprinkle
1 c. shredded Mexican cheese blend overtop
Bake at 425 until the cheese has melted - about 10 minutes.
Serve with sliced avocado and sour cream if you like.
