So this recipe started when I found these chocolate kit kat bunnies at the grocery store.  I just knew they'd be perfect on a cupcake:)  So, here's a recipe you can try just for fun or use a box mix and ready made icing - no judgement here!

To the recipe. . . 

Confetti Cupcakes

Mix together and set aside
1 2/3 c. flour
1 1/4 tsp. b. powder
1/2 tsp. salt
1/4 tsp. b. soda

In the bowl of your stand mixer beat until fluffy (2 minutes)
1/2 c. unsalted butter - room temp
1 c. sugar

Add to the butter mixture and mix until combined
2 eggs (room temp)
2 tsp. vanilla
Add in and mix
1/2 c. sour cream (room temp)
1/3 c. whole milk (room temp)

Slowly add the flour mixture to the wet, mixing until the batter is smooth.

Fold in, by hand
1/4 c. rainbow sprinkles

Place the batter into paper lined muffin tins (this makes 12 cupcakes)

Bake at 350 for about 15-18 minues - do not overbake.

Vanilla Buttercream

Beat together until creamy
1 c. unsalted butter (room temp)
1/8 tsp. salt

Slowly add in
3 1/4 c. icing sugar (might need a bit more)
Drizzle in 
3-4 tbsp. heavy cream
1 tsp. vanilla

Beat on low until combined - here you decide if you need more icing sugar or cream to get it to a spreadable consistency.

Beat for 2 minutes until fluffy and creamy.

Ice cooled cupcakes and add your sprinkle and chocolate bunnies or mini eggs.
