Healthy, feel good muffins loaded with berries are a nice item to bake and have ready for a quick breakfast or snack. These muffins have good flavor and great texture - I love the addition of cornmeal - a little bit different but gives a nice addition to the texture of these hearty muffins. You can add in whatever kind of fruit you like - I had frozen blueberries so I used those. I highly recommend leaving the orange peel in the recipe - it was a suggested ingredient in the original recipe but it gives a nice brightness to these muffins. When making these muffins, be sure to grease your muffin tins - I forgot, let them cool too long in the muffin tin and, yup, they did not come out without a great deal of help which resulted in an ugly, but tasty, muffin - LOL.
So.... let's get baking:)
4 Grain Muffins with Fruit
In a large bowl, combine 1 1/4 c. whole wheat flour 1 1/4 c. large flake oats 2/3 c. cornmeal 2/4 c. natural wheat bran 3 tsp. b. powder 1 tsp. b. soda 1 tsp. salt 1 tsp. cinnamon 1 tbsp. grated orange peel - about 1 orange 2/3 c. b. sugar
In a small bowl, mix together 2 eggs 1 3/4 c. buttermilk * 1/3 c. veg. oil 1 tsp. vanilla
Pour the wet over the flour mixture, mixing until just combined.
Gently add in your choice of fruit I used 1 1/2 c. frozen blueberries You can use fresh or frozen blueberries, raspberries or a combination of whatever fruit you'd like.
Pour into greased muffin tins and bake at 375 for about 15-18 minutes or until the tops pop up when lightly touched or a toothpick comes out clean.
Let cool for about 5 minutes and then remove from pan.

*don't have buttermilk - do this - add 1 tbsp. lemon juice or vinegar to a 1 c. measure, add milk to fill the 1 c. measure - let sit for a minute and then use it in your recipe.
