Granola is something that I always have in a jar on my counter. We grab a handful for a snack, put it on yogurt and eat it like cereal with oat milk. This base of this recipe is one I use over and over. I change it up, depending on how I'm feeling - I'm a gemini, so needless to say, very rarely is it the same twice - lol. I change the spices, the nuts but never the large flake oats. I have made it with quick oats and it works too, but the large flake oats are my favorite. This recipe is using one of the spice mixes we sell in the store. The Apple Pie Spice mix has the perfect mix of spices - so much easier than buying them all separately - I use it in crisps, muffins and now my granola. Making this is super simple, but fills your home with such a wonderful fragrance when you bake it. And did I mention, it's healthy:)
So head to the kitchen and get baking.....

Apple Spice Granola
In a large bowl, combine
4 c. large flake oats
1 c. pecan pieces or 1 package (you can buy these pre-chopped at the grocery store)
2 tsp. A Spice Affair Apple Spice (yes, it's available at crocusandivy.ca or instore)
3/4 tsp. fine sea salt

In a small bowl, mix together
1/2 c. melted coconut oil
1/3 c. maple syrup
2 tsp. vanilla

Pour the wet over the dry, mixing well.

Spread onto a parchment lined cookie sheet (this makes pouring the granola into a bag or jar so much easier)

Bake at 350 for 20 minutes, stirring once halfway through.

Remove from oven and let cool - this will give you nice chunks of granola.

Store in an airtight container.
