If you haven't seen this ice cream sandwich cake before, I think you're going to love it. It's not really a recipe, just a way of layering a couple of ingredients that turns into an amazing, delicious ice cream cake. This cake meets so many of my summer requirements - it's easy, ice cream is involved, it has chocolate and you can make it in 5 (maybe 10) minutes. It's impressive looking and more importantly, it tastes great.
So, let's get to it....
*12 ice cream sandwiches 1 container cool whip hot fudge m&m's for topping
Layer 6 ice cream sandwiches spread a layer of cool whip over top of your sandwiches (about 1/3 of the container) Add a layer of hot fudge over the cool whip Add another layer of ice cream sandwiches Spread the remaining coolwhip over the top and sides of the sandwiches. Drizzle hot fudge over top and sprinkle with m&m's (you can leave the m&m's off or substitute another kind of candy - skors, grated milk chocolate are a couple that we like)
Pop into the freezer to let set - about 3 hours or as long as you like (this can be made days ahead)
