What is your favorite sweet treat? Mine always has to have some chocolate in it! I love so many, but a brownie will always be in my top 10! I found this recipe that claimed to be like a box recipe - chewy, crispy on top and just as delicious as your favorite brownie box mix. Was it? Well, I have to say YES! This recipe does not disappoint - it's texture is perfect, the chewiness is spot on and it is richly chocolate. My only comment - double the recipe - an 8x8 pan isn't enough - lol.

Brownie

Combine and stir together in a bowl
1 1/2 c. sugar
3/4 c. flour
2/3 c. cocoa
1/2 c. icing sugar
1/2 c. dark chocolate chips
3/4 tsp. salt

In a large bowl, whisk together
2 lg. eggs
1/2 c. canola oil
2 tbsp water
1/2 tsp. vanilla

Add the dry mix to the wet and stir until combined.

Pour the batter (it will be thick) into a parchment lined 8x8 pan (if not using the paper, lightly grease your pan.)
Using a rubber spatula spread and smooth the batter into the pan.

Bake at 350 for about 40 minutes - until a toothpick comes out with a few crumbs attached. You don't want to overbake - under baked is better in these brownies.

Let cool completely before cutting into squares. The brownie needs this time to set as the middle will be quite gooey.


(you can freeze these and FYI, they're pretty good frozen, eaten right out of the freezer - trust me, I've tested them!)
