'Tis the season for fruit crisps! This is such an easy dessert to make with your favorite fruits. I have been on a real peach craze this summer so of course I needed to make a peach crisp. I made mine in a couple of individual dishes and a couple of sharing dishes - whatever you put this in will work beautifully and I've popped my sharing dishes into the freezer for another day.
Let's get to it. . .
Peach Crisp
In an bowl, mix together and pour into a greased dish (you can use 1 dish or make this into individual servings or servings for 2 - whatever you like)
6 cups sliced peaches (about 6 largish peaches)
1/3 c. sugar
1 tbsp. fresh lemon juice
1 tsp. vanilla
1/8 tsp. salt
3/4 tsp. cinnamon
*note - I like a real syrupy kind of crisp so I don't typically add flour, but if you have really juicy fruit and prefer your crisp to be less juicy - add in 1/4 c. flour to your mixture.
In a separate bowl, stir together
2/3 c. flour
1/2 c. b. sugar
1 tsp. cinnamon
2/3 c. quick oats
1/4 tsp. salt
1/2 c. melted butter (unsalted - if you don't have unsalted and use salted - leave the salt out of the recipe)
Crumble over top of your peach filling.
*if you are wanting to freeze the crisp - do this before baking.
Bake at 350 for 30-40 minutes, until the peaches are bubbling and the topping is golden.
Let cool for a few minutes and serve with your favorite ice cream.
