Here's a recipe that would be perfect for a holiday brunch, coffee party or just because. It's full of really good flavors that all work together - cinnamon, orange and dates - the trifecta of deliciousness (not sure if that's a word) but it's what I'm feeling about this loaf. I found the texture, the craggy - kind of crunchy top, the softness and sweetness of the dates to be so good, that I was a happy girl! I think these would make a beautiful muffin if you want to speed up the baking time, but whether you loaf it or muffin it, it's a really tasty, yummy baked good from your kitchen.
Orange Date Loaf
In a saucepan, bring to a simmer
1 c. orange juice
Remove from heat and add in
1 cup chopped dates (pitted)
Let stand, until cool, for about 25 minutes
In a large bowl, combine and set aside
2 c. flour
3 tsp. b.powder
3/4 tsp. cinnamon
1/2 tsp. salt
3/4 c. sugar
Beat together and add to the date mixture
2 large eggs
Add 4 tbsp. melted butter to the date mixture
Pour the date mixture into the flour and stir until blended, but don't overmix.
Pour into a loaf pan that has been greased and floured or lined with parchment paper.
Bake for about 40 minutes at 350, until a toothpick comes out clean or the top bounces back when lightly touched. (Depending on the size of your loaf pan, you may want to check it at 30 minutes if it's a smaller loaf pan)
