There is something about this time of year, that has me baking and cooking with lemons. It just seems that lemons mean spring, sunny days and happy baking. This is a recipe that I've made many times - it's a beautiful, tender loaf with really good lemon flavor. It does have a couple of steps, but so worth it!
Let's bake . . .
Lemon Loaf
Mix together and set aside
1 1/2 c. flour
2 tsp. b. powder
1/2 tsp. salt
In a separate bowl, mix together
1 c. sour cream
1 c. sugar
3 large eggs
2 tsp. lemon zest
1/2 tsp. vanilla
Gently add the dry ingredients to the wet.
Add in and mix
1/2 c. vegetable oil
Pour into a greased or parchment lined loaf pan
Bake at 350 for 40-50 minutes, depending on the size of your loaf pan.
White the loaf is cooking make the glaze.
In a sauce pan, cook until the sugar has dissolved - set aside
1/3 c. lemon juice
1/3 c. sugar
Let cool the loaf cool in the pan for 10 minutes.
Remove from pan and put on a baking rack.
Drizzle the glaze over top and let it soak in.
Let loaf cool completely.
Top Glaze
Mix, making sure that you can spread the icing easily - add more liquid if needed
1 c. icing sugar
2 tbsp. lemon juice
