There is nothing earth shattering about this recipe. It's super simple, a classic that has been around forever and one that you can make in 15 minutes. Likely everyone has this recipe tucked away somewhere but what I found different about this one, and maybe I'm late to the party, is putting the marshmallows into the freezer. Mind blown - why didn't I think of this years ago? It gives you more time to incorporate the marshmallows into the butterscotch mixture, which is super helpful! So if you're needing to do a little holiday baking, put this one into your roster:)
To the recipe. . .
Marshmallow Squares
1 package or rainbow marshmallow that you're going to put into the freezer
Into a saucepan, add in and stir until smooth 1 package butterscotch chips 1 c. peanut butter 1/2 c. butter or margarine.
Remove from heat and let cool so your marshmallows don't melt.
Add your frozen marshmallows to a bowl and pour the butterscotch mixture over them. Stir quickly and spread into a parchment line 8x8 pan.
