One Pot Lemon Chicken Pasta? Yes, Please!

A pasta recipe in just 1 pot?  Yes, please!  This recipe, even though it looks like a long recipe is not - it's really easy, comes together quite quickly and is like spring on a plate!  Lemon, asparagus and chicken come together in a smooth, creamy sauce.  We liked this recipe the day I made it, but we liked it even better the 2nd day.  The 2nd day, it seemed creamier, the flavors all melded together a bit more and the star rating went up (at least in my family).  So, my advice, try the recipe and see what you think.  

Creamy Lemon Chicken & Asparagus Pasta

This recipe is made in just 1 pot!

Prep your ingredients
Asparagus (about 1 lb), cut into 1" pieces 
1 lb. boneless, skinless chicken breasts cut into bite size or a bit larger pieces and seasoned with salt and pepper
1 medium lemon, juiced and zested
1 c. heavy cream
3 c. water
12 ounces pasta (penne, farfalle - any smaller pasta)
1 ounce parmesan cheese - finely grated.

Into your pan, add in 
1 tbsp. olive oil until hot.
When hot, add chicken, turning until lightly browned and cooked (about 5-8 minutes)
Transfer the chicken to a plate

Into the pot add in and bring to a boil
3 c. water,
1 c. heavy cream,
2 tbsp. olive oil
1 3/4 tsp. salt
12 ounces pasta
Let this boil, stirring occasionally so the pasta doesn't stick to the bottom, until the pasta is almost al dente.
Add in the asparagus and let cook for 2 minutes until tender crisp.
Add the chicken and any juices that have accumulated, back in.
Add in the lemon juice and zest and parmesan cheese.
Stir until combined.
