Scrumptious Chocolate Chip Pumpkin Loaf
I have been making this on repeat for the last two weeks! I think I've made it 4 times and every time it turns out perfectly. I've also used this recipe and baked it into muffins - equally delicious. My take on this recipe - super easy, two bowls (but you could do it in one if you don't combine all your dry first), easy ingredients, it has great flavor, good texture and it's a nice, moist loaf. So, nothing bad to say about this beauty, so let's get to the recipe.
Chocolate Chip Pumpkin Loaf
In a small bowl add in and give it a good whisk
1 3/4 c. flour (spooned into measuring cups)
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons pumpkin pie spice
In a larger bowl add in a mix together
1 1/4 cups sugar
2 large eggs
Add in and stir until combined
1 can pumpkin puree (about 15 ounces) or 1 3/4 cups
1/2 cup vegetable or canola oil
2 teaspoons vanilla extract
Mix in the dry ingredients until almost combined
Add in
1/2-3/4 c. mini chocolate chips (I usually pour them in until I think I have enough)
Finish mixing, but don't over mix.
Pour into a parchment lined loaf pan.
Bake at 350 for about 50 minutes (depending on the size of your loaf pan).
Remove, let cool and slice!
