Snack Time!

Is anyone else feeling like fall is going too fast? It seems once summer is over, kids back to school, time goes too fast. Maybe because we know what's coming (not going to say that 4 letter word that starts with S) Anyway, we've had beautiful weather so far, great for being outside! Here's a recipe to keep your energy up, satisfy your snacking and is a healthy treat - and yes, it has chocolate:)


Peanut Butter Balls


Combine
1/2 c. natural peanut butter
1 tsp. maple syrup
3/4 c. Rice Krispies (I used brown rice Rice Krispies - gluten free)


Roll into balls (recipe suggested 12 but I made less)
Pop into freezer for about 15 minutes until firm.


Melt
1/2 c. dark chocolate chips


Remove peanut butter balls from freezer and roll or dip into the chocolate.
Pop back into freezer until set - about 15 minutes.
